LASCO Instant Chocolate -Banana Muffins

  • ½ cup LASCO Soft Margarine; room temperature
  • ¼ cup LASCO Instant Chocolate Mix with Nutmeg
  • ¼ cup Brown Sugar
  • 2 Eggs
  • 1 tsp Vanilla
  • ½ cup Sour cream
  • 1 tsp. Baking soda
  • ½ tsp Salt
  • 2-3 Ripe bananas; mashed
  • 1 ½ cups All-purpose flour
  • 1 cup Semi-sweet chocolate chips


  1. Preheat oven to 350-degree Fahrenheit.
  2. Line a 12 muffin pan with parchment muffin paper. Set aside.
  3. In the bowl of your electric mixer, combine the Margarine and sugar on medium speed for 2 minutes. Add eggs, vanilla, sour cream, baking soda, salt and LASCO Instant Chocolate Mix.
  4. Mix for one minute until combined, scraping the sides of the bowl as necessary. Add bananas and mix well.
  5. Reduce the mixer speed to low and add flour, mixing until just combined. Stir in chocolate chips.  Spread the batter into the lined 12 cup muffin pan and top with extra chocolate chips if desired.  Bake for 20-25 minutes, or until center is set and a toothpick inserted comes out clean.  Allow to cool for 10 minutes, and then transfer to a wire rack to cool completely. Add your favourite frostings. Enjoy!
