Bread Pudding with Lemon Pineapple Sauce

  • Loaf of ciabatta bread
  • Tablespoon extra virgin olive oil
  • Tablespoon chopped chives
Lemon Pineapple Sauce
  • 1 cup LASCO Pineapple slices (chopped)
  • ¼ cup lemon juice
  • ¼ water (from pineapple)
  • 2-3 tbsps cornstarch
  • 3 tbsps rum


  1. Heat LASCO Food Drink on very low flame. Add Coconut cream powder and LASCO Margarine.
  2. Beat eggs until slightly mixed, add sugar, salt, flavouring and blend.
  3. Add milk slowly to egg mixture, stirring constantly. Add all remaining spices.
  4. Pour mixture on bread cubes and set aside for 5 minutes.
  5. Pour into a 20.5 cm baking dish. Place in the oven and bake at 180ºC for 45 minutes or until firm.
  6. Allow to cool and serve with sauce.
Lemon Pineapple Sauce
  1. Combine all ingredients, except rum, in a pot. Heat throughly until thickened. Remove from flame, add rum, cool and serve.
